Overnight Oats

A tried and true breakfast I always come back to. I use this when I know I have to prepare something for breakfast because it’s been busy, but I can make a few portions of the oats ahead without washing another pot.

Ingredients

1/3 to 1/2 cup rolled oats

1/2 cup milk of choice (cow’s milk > soy milk > unsweetened oat milk > unsweetened almond milk)

1 tbsp chia seeds

1/2 tbsp ground flax seeds

Toppings

1/2 cup berries or any fruit (julienned apple, sliced peaches, grape halves, 1/4 cup pomegranates, etc)

1-2 tbsp plain roasted walnuts/almonds/pecans

Instructions

  1. Add rolled oats, milk of choice, chia seeds, and ground flax seeds into a 16oz pint mason/glass jar. Aim to make 2-3 of these to use throughout the week.
  2. Add toppings when ready to eat and if wanting to eat it cold
  3. If want to eat warm, microwave for 30-60s. Option to mix in natural peanut or almond butter in instead of nut toppings, then add fruit toppings

PB&J

  • Jam of choice
  • Peanut butter
  • Chopped strawberries
  • Raspberries

Chocolate Banana

  • ½ banana, mashed
  • 1 teaspoon cocoa powder
  • ¼ teaspoon cinnamon
  • Pinch nutmeg
  • Banana slices
